New York HOP Varieties
About the Region
Central New York was the hop capital of the United States for most of the 1800s. At its peak, the corridor between Albany and Syracuse produced millions of pounds of hops a year, and the region’s honeyed silt loam soils became famous for the flavors they imparted.
New York hops are still strong today! In 2013, New York’s Farm Brewery Act kicked off a wave of new hop yards, and the state now has dozens of small farms growing on 5 to 30 acres each. New York-grown versions of familiar varieties taste noticeably different from their Pacific Northwest counterparts, with earthy, slightly floral qualities that come from the soil and the cooler growing season. We work directly with New York growers and have since the beginning. These hops are a big part of who we are.

About the Region
The Yakima Valley in Washington produces roughly 75% of all hops grown in the United States. The conditions there are hard to beat: volcanic soil, irrigation from the Yakima River, 16-hour summer days, and a high-desert climate where warm afternoons drop into cool nights. That temperature swing concentrates unique aroma compounds.
Idaho has become an increasingly important growing region, too, with varieties like Idaho 7 and newer experimental releases coming out of the state’s hop yards.
Oregon is part of the PNW picture with farms producing standout lots of Strata and other Pacific Northwest staples. Our domestic catalog covers the hops brewers reach for most alongside counter-culture picks like Anchovy, Zumo, and Sonnet that are worth getting to know.
Montana is really making a name for itself in the craft beer scene. The region sits right along the 45th to 48th parallels, which is perfect for hop farming. You get those ideal, long daylight hours paired with cool evenings, and that climate creates a distinct regional character in the hops that brewers are starting to really value.

About the Region
The Hallertau region in Bavaria is the largest continuous hop-growing area in the world, and it’s been producing hops for over a thousand years. Nearly 90% of Germany’s hop crop comes from this one stretch of rolling hills north of Munich, where family farms average around 30 acres and pass from generation to generation. The soils provide conditions that result in the clean, delicate aroma profiles German hops are known for.
Classic, Noble styles like Hallertau Mittelfruh are a benchmark for German-style hops, but newer German varieties are some of the most exciting hops on the market. For example, Guild Grower Lochner Hopfen won a gold medal at the Deutscher Hopfen-Champion awards in 2025 for their German Tango.
